Historically, as early as the Middle Ages, this province began by producing still, non-sparkling wines. These clear wines, also called “natural”, obtained their fame thanks to King Henri IV, then in the 17th century, the kwoledge of the monk Dom Pérignon who was the first to master the making of different raw vines and the control of the fermentation during the second phase of fermentation.
Champagne is made primarily from three grape varieties: Pinot Noir, Meunier and Chardonnay.
